Grilled Greek Chicken Pita With Homemade Tzatziki Sauce


This dinner was good!! I was proud of how good the sauce turned out!!

Grilled Chicken Skewers

Ingredients:

1.5 lbs chicken breast
3 TBS lemon juice
1 TBS olive oil
1 TBS red wine vinegar
1 TBS minced garlic
2 tsp dried oregano
1 tsp dried parsley
1/2 tsp coriander


Cut chicken into cubes and marinade in the rest of the ingredients for 1 hour or more. Skewer chicken and grilled for 5 minutes per side. I added red peppers to mine. (don't forget to soak your skewers)

Tzatziki Sauce

Ingredients:

1/2 cucumber peeled and diced
1 container of plain non fat yogurt (mine was 5.3 oz)
4 TBS lemon juice
1 heaping TBS dill
1 tsp minced garlic
1/8 tsp salt
1/4 tsp pepper

Mix it all together and thats it!!


I added feta cheese, cucumbers and tomatoes into my pita as well!! Definitely a meal I'll repeat again and again!

Beef and Barley Soup



Ingredient-

1.5-2 lbs beef stew meat
1 tsp oil
5 cups water 
2 cups beef broth 
3-6 TBS  Worcestershire sauce
1 1/2 cups carrots diced
1 medium onion diced
1/2 cup celery diced
3-6 cloves garlic minced
3 bay leaves
1 cup dry barley
Pepper

Directions-

Add oil and meat to pot on med-high and brown meat. 
Once meat is browned add carrots, onion, celery, garlic and mix and cool for a couple minutes. 
Add water, beef broth, Worcestershire sauce, bay leaves and pepper. 
Bring to a boil, then turn heat to low and cover. 
Simmer for 1.5-3 hours. 
Add barley and simmer for another 30 minutes. 

Remove bay leaves and serve.

Shape Chicken Nuggets


My daughter is such a picky eater and refuses to try a lot of food. Luckily, everything is awesome if it's in shape form. ;) I've tried making her chicken tenders so many times but she refuses to try them. The second she saw these Shape Chicken Nuggets she ate them right up!

Ingredients:

1/2 lb chicken breast
1 large egg
dash of salt
bread crumbs (I used whole wheat)

Directions:

Boil chicken in water for 15-20. Blend cooled chicken breast, egg and salt. Pack it into cookie cutters or make balls. Roll it in bread crumbs. Cook on a cookie sheet at 400 degrees for 10 minutes- flipping halfway through.

Thats it!! Nice, simple and healthy!!



Hidden Veggie Mac n Cheese

We had hidden Mac n Cheese and Shape Chicken Nuggets for dinner. They were a hit. Toddler and husband approved! It makes TONS!!

Ingredients:

1 cup chopped carrots
1 small cauliflower cut into pieces
2 cups butternut squash cut into pieces
1/2 cup of milk
0.5 tsp salt
2 cups shredded cheddar cheese
8 oz cream cheese
4 TBS butter
16 oz elbow pasta

Directions:

Cook cauliflower and carrots in a pan covered and filled about 1/4 of the way with water. Cook for 7 minutes. Add squash and cook for 3 more min. Blend cooled veggies with 3/4 cup if water until it is a smooth puree. On med-low heat cook veggie puree with milk, salt, cheddar, butter, and cream cheese. Stir until smooth. Add cooked pasta and stir.

Crockpot Chicken Jambalaya

I love Jambalaya so this clean eating version is perfect! Plus who doesn't love crockpot meals!! Either throw it in first thing in the morning and cook it on low, or at nap time and cook it on high! Super fast and easy which is exactly what I need these days!! It was too spicy for my daughter but my husband and I loved it!! It would also be good with shrimp and turkey sausage.



Ingredients:


  • 1-2 lbs boneless, skinless chicken breasts
  • Bell peppers diced (I used 2 large green ones because they were on sale but 3 small tri color ones would make it more traditional)
  • 4-6 large stalks of celery diced
  • 1 medium onion diced
  • 2 cups of diced tomatoes with juices
  • 2 cups organic low sodium chicken broth 
  • 6 oz can of organic tomato paste
  • 2-6 cloves of garlic minced depending on taste (I used 6)
  • 3 TBS of cajun seasoning (I used McCormick)- if you like it spicy add a little more
  • 2 cups brown rice
Directions:

Add everything except rice and cook on low for 8 hours or high for 4 hours. Add cooked brown rice near the end. 

Makes about 8 servings.

Sneaky Veggie Meatballs



I made my sneaky veggie meatballs for dinner tonight. My husband and toddler both love them!! I always make tons and have them for lunches.



I dice (used my ninja) half a white onion (~1/2 cup), 1 medium zucchini (~ 1 cup), and ~1 cup of carrots. I like a lot of veggies. It would also be good with 1/2 a cup or even 1/4 a cup of each.



Ingredients:

2 lbs ground turkey
1/2 cup white onion
1 cup zucchini
1 cup carrots
2 eggs
1 cup whole wheat bread crumbs
2 TBS Italian seasoning




I normally serve it with marinara sauce and whole wheat spaghetti. I actually like it plan for lunches. Let me know what you think if you try it!!
